Vietnam Food Cuisine

any of us may be somewhat familiar with Vietnamese cuisine thanks to the many eateries found here in Singapore. But like how our Hainanese chicken rice or laksa tastes kinda different in other countries, most of the Vietnam dishes here have probably been tweaked to suit our local taste buds.
Vietnamese cuisine typically focuses on a balance of fragrance, taste and colour and appeals to the five senses, from the visual arrangement of the food to the crispy ingredients used like fresh raw vegetables or bean sprouts. The dishes are then completed with a variety of condiments, fish sauce being the most common and indispensable one that you can probably find on every table here.
Vietnamese cuisine has been influenced by Chinese and French throughout its history, resulting in many similar dishes we see today like dumplings, popiah, and baguettes. Let's look at some of the authentic Vietnamese cuisine that you should try in your Vietnam trip!
Pho
Probably the most popular and iconic dish of Vietnam, pho is noodle soup dish that's traditionally eaten for breakfast. It is made with rice noodles and served with a rich bone broth completed with vegetables, herbs and chicken or beef.
Bánh Mì
You can literally find banh mi food stalls all over the country. It's a soft fluffy baguette that comes with a rich choice of fillings. A perfect snack for any time of the day.
Banh Cuốn
Quite similar to our chee cheong fun here in Singapore, banh cuon is a traditional North Vietnam dish that's made with steamed rice noodle rolls completed with delicious fillings.
Another traditional snack to try is luti gendang, fried fluffy bread with fish floss fillings. Prefer some crackers or keropok? Try some fried spicy emping melinjo, cracker chips made from bitternut.
Bánh Xèo
A crispy pancake made typically with rice flour. This famous street food is then filled with fresh ingredients like pork strips, shrimp and bean sprouts before frying it to perfection.
Egg Coffee
A cup of java to start the day right. How about a little twist? Try the egg coffee here! Cà phê trúng” is a rich Vietnamese coffee base with frothy egg yolk and condensed milk on top.
Gỏi Cuốn
Vietnamese spring rolls that are typically packed with crispy salad, prawns and pork, and then served with a sweet-and-spicy dip topped with peanuts.
Hến Xúc Bánh Tráng
One of the most favourite dishes in Vietnam to go with a round of beer. Stir-fried baby soft clams with crunchy sesame rice crackers marinated in various herbs and spices brings a blissful blend of texture and taste.
Xôi Xéo
A sweet savoury Vietnamese snack loved by locals and tourists alike. Typically a combination of sticky glutinous rice, turmeric, green mung bean paste and dried shallots.
